I used to love glugging eggnog until I found out how much refined sugar was in it. And based on animal-protein ingredients, the calorie count was criminal! I did miss the unique flavor, however.
I don’t have to count calories with this plant-based version, and it leaves me completely satisfied. Adding chia seeds takes it to a whole new level.
2 C. cashew milk or other plant-based milk of your choice
1/2 C. full fat coconut milk
1/3 C. raw cashews for 30 minutes (optional)
4-6 Medjool dates
1 teaspoon vanilla extract
1 teaspoon freshly ground nutmeg
pinch of ground cinnamon
pinch of sea salt
1/2 C. + 2 Tbsp chia seeds
Add all ingredients except chia seeds to a blender and process until creamy and smooth. If you just want eggnog, serve. For pudding, stir in chia seeds and let soak overnight. Add a pinch of freshly ground nutmeg on top.
